Sous Vide Cooking: How To Set the Instant Pot Ultra’s Custom Temperature Control

I bought the Instant Pot Ultra to use both as a second Instant Pot but, more importantly, so I could cook sous vide. The Ultra has a custom temperature control in the Ultra cooking mode that allows you to set the temperature you want (good to within plus or minus 5 degrees).

Unfortunately, it’s not intuitively obvious how to set it. Since I figured there are other folks out there who are probably scratching their heads like I was over this, I made a quick little “how-to” video. Enjoy!

    do you sous vide in the Ultra with lid on or off?

    Just got my Ultra last Sunday. Left a comment at your longer page on sous vide cooking. I get much lower temps measured with a Thermapen thermometer than the temp selected on the display if I leave the lid off. With the lid on, the temp is coming out close to what I input on the display. The unit sometimes starts “cooking” at a much lower temperature and then after perhaps 10-15 minutes it is approaching or even exceeding the inputted temperature. Does your Ultra work like this? I find that I don’t have to close the lid, but just put it on at an offset so it set flat and doesn’t start beeping and complaining about the lid not being set correctly. I noticed, by the way, that the review of the new Instant Pot Max at CNET mentions that the sous vide temperatures are much below what is entered:
